Mediterranean Shrimp and Bean Salad

Ingredients
  

  • 10 Oz Large cooked shrimp cut into bite-size pieces
  • 1 1/2 Cups Grape or cherry tomates, halved
  • 1 Large Shallot, minced
  • 3/4 Cup Cooked chickpeas
  • 1/4 Cup Shredded fresh basil
  • 1/4 Tsp Paprika
  • 1/4 Tsp Salt
  • 1/4 Tsp Black pepper
  • 1/8 Tsp Dried oregano
  • 3 Tbl Tomato or vegetable juice
  • 1 Tbl White wine vinegar
  • 1 Tbl Olive oil

Instructions
 

  • Combine shrimp, tomatoes, shallot, chickpeas and basil in large bowl
  • Combine paprika, salt, pepper and oregano in small bowl. Whisk in tomato juice, vinegar and oil until well blended. Pour over salad; toss gently to coat.
