
Mediterranean Shrimp and Bean Salad
Ingredients
- 10 Oz Large cooked shrimp cut into bite-size pieces
- 1 1/2 Cups Grape or cherry tomates, halved
- 1 Large Shallot, minced
- 3/4 Cup Cooked chickpeas
- 1/4 Cup Shredded fresh basil
- 1/4 Tsp Paprika
- 1/4 Tsp Salt
- 1/4 Tsp Black pepper
- 1/8 Tsp Dried oregano
- 3 Tbl Tomato or vegetable juice
- 1 Tbl White wine vinegar
- 1 Tbl Olive oil
Instructions
- Combine shrimp, tomatoes, shallot, chickpeas and basil in large bowl
- Combine paprika, salt, pepper and oregano in small bowl. Whisk in tomato juice, vinegar and oil until well blended. Pour over salad; toss gently to coat.
