Try this nice fall soup!
Pumpkin-Apple Soup
Ingredients
- 1/4 Cup Butter
- 1 Clove Garlic minced
- 1 Onion chopped
- 1 Leek chopped
- 1 Apple cored peeled and chopped
- 1 Tbl Curry powder
- 2 Cup Fresh pumpkin chopped
- 4 Cups Chicken broth
- 1 Cup Whipping cream
- Salt and pepper to taste
Instructions
- Melt butter in a saucepan over medium heat; stir in garlic, onion, leek and apple. Saute' until onion and apple are tender.
- Stir in curry powder; cook one minute, stirring constantly.
- Add pumpkin and chicken broth. Bring to a boil, stirring occasionally.
- Reduce heat and simmer until pumpkin is tender.
- Puree mixture in a blender or food processor. Return to saucepan; stir in cream and heat through.
- Season with salt and pepper.
