Pumpkin-Apple Soup

Pumpkin-Apple Soup

Ingredients
  

  • 1/4 Cup Butter
  • 1 Clove Garlic minced
  • 1 Onion chopped
  • 1 Leek chopped
  • 1 Apple cored peeled and chopped
  • 1 Tbl Curry powder
  • 2 Cup Fresh pumpkin chopped
  • 4 Cups Chicken broth
  • 1 Cup Whipping cream
  • Salt and pepper to taste

Instructions
 

  • Melt butter in a saucepan over medium heat; stir in garlic, onion, leek and apple. Saute' until onion and apple are tender.
  • Stir in curry powder; cook one minute, stirring constantly.
  • Add pumpkin and chicken broth. Bring to a boil, stirring occasionally.
  • Reduce heat and simmer until pumpkin is tender.
  • Puree mixture in a blender or food processor. Return to saucepan; stir in cream and heat through.
  • Season with salt and pepper.
