Broccoli With Black Beans and Garlic
Serve over polenta or brown rice – this dish makes a very satisfying meal
Ingredients
- 1 1/2 Tbl Olive oil
- 4 Cloves garlic, minced
- 6 Cups Broccoli florets
- 1 Cup Vegetable broth
- 1 1/2 Cups Cooked black beans (cooked from dry or canned, drained)
Instructions
- In a large skillet, heat the oil over high heat. Add garlic; cook stirring 10 seconds. Add the broccoli; cook, stirring, until tender crisp, about 4 minutes.
- Add broth and bring to a boil. Add the beans. Return to a boil. Add the beans. Return to a boil and cook, stirring until heated through, about 3 minutes
