Broccoli With Black Beans and Garlic

Serve over polenta or brown rice – this dish makes a very satisfying meal

Ingredients
  

  • 1 1/2 Tbl Olive oil
  • 4 Cloves garlic, minced
  • 6 Cups Broccoli florets
  • 1 Cup Vegetable broth
  • 1 1/2 Cups Cooked black beans (cooked from dry or canned, drained)

Instructions
 

  • In a large skillet, heat the oil over high heat. Add garlic; cook stirring 10 seconds. Add the broccoli; cook, stirring, until tender crisp, about 4 minutes.
  • Add broth and bring to a boil. Add the beans. Return to a boil. Add the beans. Return to a boil and cook, stirring until heated through, about 3 minutes

Variation: Add 1 cup sliced red bell peppers when you add the broccoli
