Chicken, Rice and Veggie Roll-Ups

When you need a change from a boring sandwich, try this filling and nutritious roll-up. It's great when you're in a hurry to get the kids off to sports practice, a theater production or a playdate!

Ingredients
  

  • 4 100% Wheat tortillas
  • 4 Tbl Plain yogurt
  • 1 Cup Cooked brown rice
  • 1 Cup Cooked chicken, torn into bite-sized pieces
  • 1 Cup Chopped tomato
  • 1 Cup Chopped romaine lettuce

Instructions
 

  • Lay tortillas on a flat surface and spread 1 tablespoon of yogurt on each
  • In a large mixing bowl, combine the rice, chicken, tomatoes and lettuce and spoon 1/4 of the mixture down the center of each tortilla
  • Fold in the ends and wrap tightly
